If you are looking for a variation on the classic tiramisu to surprise your guests, then this recipe is perfect for you.

This original version of the classic Italian dessert uses panettone instead of ladyfingers and creates an explosion of flavors in every bite.

If you don’t have panettone you can use a slice of Colomba or ready-made slices!

  • Slices of basic panettone
  • 500g of mascarpone
  • 3 tablespoons of icing sugar
  • Coffee to taste
  • Cocoa powder
 
Directions
In a bowl, mix the mascarpone with the egg yolks and icing sugar. Separately, whip the egg white until stiff and incorporate it into the mascarpone cream.
Add the panettone crumbled with a knife to the mixture and let it rest in the fridge for half an hour. In the meantime, roll out the slice of panettone with a rolling pin and cut out discs with a pastry cutter.
In the meantime, roll out the slice of panettone with a rolling pin and cut out discs with a pastry cutter. Cook the discs in a preheated oven at 150°C for 7 minutes. Once cooked, sprinkle the panettone discs with granulated sugar and caramelize.
Plating
Arrange some sifted cocoa powder on a serving plate and place the panettone discs on one side. Using a pastry bag, form tufts of mascarpone cream onto the plate. Add the dish with coffee beans and accompany with a cup of coffee to wet the discs. If desired, decorate the dish with ground coffee and serve.
