"Since 2001, I have been the chef at the Fančita restaurant in Vrsar, Istria. I started out as a hobbyist, but then cuisine grabbed me and wouldn't let go.
My roots
My roots are in Istria, a rugged land suspended between the sea and the mountains, but if you discover it, it will give you the best of its treasures.
Fančita is my mother's name, and comes from her grandmother's name, Franka.
My kitchen
I work a lot in the summer, and the cuisine in my restaurant is very popular with both local and European tourists.
With my dishes I bring the sea to the table, and I personally choose the best that it can offer me.
I love the sea in all seasons, it gives me a sense of peace, and when I look at the horizon in the evening I think about what the next trip will be. I like to cook everything, but in recent years the cuisine of South America, especially Argentina, has fascinated me deeply.
I have discovered the meat of the Istrian Boscarino ox: once used in the countryside as a working animal, it has been rediscovered for its prized meat, which has a flavor full of memories.
My passions
After the summer season, when the restaurant is closed, it's time to pick olives. For me it is a good way to relax in the countryside and make good Istrian olive oil.
After oil season I start to find inspiration for new dishes again, and the best way is to travel the world. My favorite destination is where I can find good food, markets and good wine.
Vrsar is historically linked to Venice and was often visited by Giacomo Casanova.
